Legal and/or tax experts,

What are the legal and tax issues to be concerned with on a project such as this, be it through Ebay or elsewhere?

Tax issues????

Give your CPA a list of your gross receipts and expenses. Pay the amount they tell you.

and make sure you have supporting documents (receipts, journals, ect)

You should keep your receipts, but you dont need them. You can just send your tax accountant a printed profit and loss or you can even write down this info on a couple pieces of paper if you want to be ghetto.
