Ving Rhames is cool you are right. My favourite is actually the somewhat underrated Day Of The Dead. This is THE zombie flick of all times for me. The plot or characters aren't that interesting but man the ZOMBIES are best in the history of cinema. It has gore too.

I'm a big fan of Return of the Living Dead, it's the movie that made me love Zombie movies.

Planet Terror > DOTD remake.

Shaun of the Dead is genius.

The greatest movie sub-genres are actually Women in Prison movies and their closely related sub-subgenre of Nazisploitation. LInk is NSFW.

... and if you like recent zombie movies check out Planet Terror while it's still in theaters.

No love for the 1968 classic Night of the Living Dead?

I'm not even a fan of the genre. But this movie is tremendous.
