finding a good butcher in las vegas

Well, it's in the upper 80's now so it's time to think about grilling, can someone recommend a good butcher around here? preferably one that the high end casinos use.

I live south strip so i'd prefer something around here or henderson

i know whole foods has a preety good meat section but i'm looking for a place that is specialized
