Default Need a Quick Recipe

I know there are alot of recipe threads in here, but I need something specific.

I told my g/f that I would cook her dinner and come up with something new. Her and I have our favorite dishes, but we make them alot and I want to try something new.

I need something that is quick, without alot of ingredients or extravagant extras. I'd prefer to have something that includes boneless/skinless chicken breasts.

I just cooked a meal for my parents and I that included chicken, linguine, sun-dried tomatoes, and everything else (quick and easy), but it didn't turn out so good - it could have been better.

I only have access to a Wal-Mart and Giant Eagle and don't want to have to spend days looking for ingredients.

If the recipe is on the internet, links will be good enough.

I have two I can think of. Both use alcohol for the chicken.

Do you prefer Italian or Southwestern?

CHICKEN PICCATA

4 boneless skinless chicken breasts
1 stick butter
1 cup flour
1 tsp salt
1/2 tsp pepper
1 cup milk
3/4 cup very dry white wine
1-2 fresh lemons
1-2 tsp capers, optional

In large saute or fry pan, melt butter. While butter is melting, combine flour, salt and pepper in small bowl. Dip each piece of chicken in milk; shake off excess. Dredge chicken in flour mixture and add to fry pan. (I like to cut chicken breasts in half before coating.)

Saute chicken in butter over medium to medium-high heat until browned and cooked through, turning often. Add more butter as needed. (Be careful turning chicken so as not to break off any of the flour coating.)

Remove chicken from pan and place on platter. Keep chicken warm while making the sauce.

Turn heat to medium high and deglaze with the wine, stirring to get all of the brown bits off the bottom of the pan. Turn heat to medium low and continue to cook sauce, stirring frequently. Squeeze juice of 1/2 lemon through cheesecloth into sauce (add capers at this point if using them) and continue to stir until sauce has thickened slightly.

(Note: Sauce should be tasted frequently, and more wine or lemon can be added as necessary. If sauce does not thicken properly, add a little bit of flour and continue to stir.)

When sauce is ready, add chicken back to the pan and turn to coat.

For serving: Remove chicken to serving platter and top with any additional sauce, parsley sprigs and lemon slices.









I cant find my moms recipe right now, but this is close, she serves hers on a bed of pasta w/ garlic and olive oil

my roommate has a new cooking blog up and he has semi simple traditional chinese recipes which are delicious (I am eating the chinese meat sauce and rice right now)

Italian would be good, but with both, I'd be able to choose?

It's just easy to buy and doesn't take alot of preparation. My g/f likes chicken also.

Southwestern Option

Margarita Chicken and Black Bean Salad

Put your chicken in a bowl

salt and pepper

Add juice of one lime

Add garlic clove (pressed or chopped)

Add a shot glass of tequila (take one for yourself, too)

Fill the shotglass halfway with triple sec, fill the other half with vegetable oil, add that to the bowl

Let it marinate for a couple hours, then grill or broil.


For black bean salad:

Open a can of black beans
Open a small can of corn (or cook an ear and get your kernels)
Dice a small tomato
Chop some cliantro

Mix

Add cumin to taste

If you like, you can add mango, too

Italian option

Chicken with Tomato, Prosciutto, and Gnocchi

Get some prosciutto (domestic will work), about a 1/4 lb will do. Dice it.

Slice two cloves of garlic

Dice one tomato for every chicken breast you are cooking. Salt and set aside.

If you like it spicy, get a small red chili. Remove seeds and chop.

Start boiling water for the gnocchi. Get whatever the store has, you should be able to find something decent in refrigerated section.

In a large saucepan, bring extra virgin olive oil to medium heat, toss in garlic, prosciutto, chili pepper if using. Saute for 2 minutes or so.

Add chicken to saucepan. Cook 3 minutes or so, turn over. Cook another 6 minutes or so.

Add tomato and about a 1/2 cup of white wine (I like pinot grigio for this, use whatever you like).

Drink a glass of wine.

Cook for about 20 minutes. Time your gnocchi to be ready about the same time.
