It looks like this will support dual-link dvi.

yes, you should be able to get a cable for that that splits into two DVI-D outputs.

1) Where did you go to update your video drivers? Dell or ATI's website?

2) If you go to desktop > properties > settings will it let you set the resolution to 2560x1600 but just reverts back to 1280x800 when you try to switch or will it not let you set that resolution at all?

1) ati's site.

2) it will not let me go any higher than 1280x800.

update the drivers at dell's site. you can try reverting back to your previous drivers before you do, but there's really no need.

I assume your system has Vista. If so, here is a direct link to the video drivers.

Please post a pic of the DVI connector on the adapter cable - I suspect it does not support dual-link, but the card may do so.

EDIT: and the DVI cable you are using too, please.

sorry if the quality sucks, ugh.

the yellow tagged cord is the one that came with the monitor. i currently have it attached to the splitter plug with the "1" on it (bottom in pic).

the port on the monitor says dvi-d. the other end of the cable (top in pic) is currently in there.
