The I-40 route is like a straight line to go to Vegas. The drive is going through endless nothing. Oklahoma, Texas panhandle, all of New Mexico, and nearly all of Arizona. It is just driving to where the smallest part of the country's populations lives at. The I-40 drive is probably better with distances and missing the Rockies, but you will enjoy the longer drive on I-70

I-40 route is boring.
But it also practically follows the same path as the famous old Route 66 for a lot of the way. So you can stop off at really cheesy souvenir places or at the 'Sleep In a Wig-Wam' place etc.
If you don't know what Route 66 is then look it up on Wikipedia or something.

Also, it seems to me that a rather obvious option is to head out there on one road and head back on the other.

There's tons of interesting stuff to see in NM and AZ, you just won't see it on I-40 (lots of interesting diversions if you have plenty of free time). If you take 70 out make sure to stop and see Black Canyon of the Gunnison in CO if you can.

I-70 because Colorado is the best state and you'll get to spend lots of time here!!

I'm driving from Omaha to Grand Junction today. (through Nebraska and 80% of Colorado)

Any tips on food, quick stops etc????
