Default 7-Card Stud Rule

I've only ever played Stud once so don't know much about it at all. But 1 question bothers me. If 8 players see all 7 cards in a super loose home game, 56 cards would be needed so what happens? I presume there must be a rule dealing with this but have never seen any reference to it anywhere.

if a hand requires 53 cards, the 7th card is dealt as a face up community card.

Yeah - it's dealt face up and everyone uses the card. Very rarely to happen unless it's fixed to be done IMO.
