Default Best way to cook a steak

Sorry if this is too basic, but I am wonder what is the best way to cook a steak? I just bought some very nice Omaha Steaks Filet Mignons. Do you like to rub it with polive oil and just cook it on a frying pan? Or do you like to finish it off in the oven?

I am going to cook the steaks on a skillet grill if that matters.

How heavy is your skillet?

Nothing matters as much as a) the quality of the steak and b) the heaviness of the pan.

Alton says to sear in a screaming hot cast iron skillet, 30s each side, then finish in a 500F oven. I usually just cook a little longer on a little colder skillet and skip the oven, and it works fine because I like it rare.

You don't really need the olive oil but I like the way it comes out better when I've got a bit on there. Salt and pepper for seasoning.

Let sit at room temp for 1 hour
Kosher salt, fresh ground pepper, EVOO
Sear both sides, which means place and leave the [censored] alone for 1 minute.
Cook to desired doneness.
Let rest for 10 minutes.
Enjoy.

Any other way is blasphemous.

It's fine, its just hibernating untill next spring.

Sp it's better to rub the meat with olive oil, rather than heating up olive oil in the pan? Or am I just being a NIT and it really doesn't matter?
