I like my steaks rare, which means I like them as untouched as possible. I really don't see how messing with some meat for over 12 hours is going to result in a better product than two to three minutes on the grill.

Nobody brines a Porterhouse, and anyone taking a NY Strip and curing it is making it into beef jerky. There aren't any new cooking methods under the sun, and there's a reason that the best steak restaurants in the world don't let their meat sit in salt baths for days.

and just grilling a filet is a sure sign that you don't know what you're doing... charcoal grills work fine for new yorks and rib-eyes, but you need a little more for a good filet

I usually sear it in a hot skillet to lock in the juices, then leave it in a 200 degree oven till it's a little under done.

then i grill it a few minutes on each side.... the low heat oven does a good job relaxing the meat... you can break it apart with a fork
