Default 5NL-AA and a set.

Hand 1 confused me, and I'm wondering if there's a better line in hand 2.

Hand 1: Just try to get all in on the flop, raise him to potsize and call a shove.

Hand 2: Id bet bigger on the turn and maybe consider a check on the river if hes a notorious river bluffer.

Hand 1: It depends on how your opponent is playing. Is he a fish playing too many hands? If he's a maniac, raises his min raise and call shove. If he's a nit fold. Do you have stats??

Hand 2: Bet out on flop $0.50. Lead turn if he's known to be a calling station. Checking also gains value from a 10 on river. Whereas fires all three streets will scared of most strong holdings.
