Don't we buy ourselves alot of free cards when we don't have these hands because our opponent is afraid of betting into the nuts?

It looks very much like a bluff from his point of view. I would think 99% of the time AA, KK, AK would either bet the flop or turn.
This is only even marginal if he is scared to lose his stack, otherwise I think he calls down
