BTW I hate how some restaurants try to show how cool they are by undercooking everything, so like Rare is almost raw, medium rare is what "rare" should be, etc.
Yeah genius, bringing me steak that's not what I wanted is so freaking hip.

He's right, I like my steak medium, but to most places that means dripping blood, so I order medium well and get what should be medium.

I go with Medium-Rare.

I seldom get my steak undercooked. I don't mind Rare (seldom comes that way) or Medium (probably >50% of the time). Anything above Medium is a wasted steak IMO.

Crappy places overcook. Go to a good steakhouse..start with Jumbo Shrimp Cocktail or Lump Crabmeat if available. Med rare Porter, baked, creamed spinach, nice bottle of cab sav (03 Silverado or 04 Mondavi, if special go Mondavi or Beringer's 97 Reserve)...finish with coffee and slice of cheesecake and take the best crap of your life in the morning.

I have never had steak that was not well done. It just does not seem appealing to me, but maybe one day I'll try medium well.
