You are going to really enjoy the Wusthof knife. I have a full set of J.A. Henckels and a 6" Wusthof Chef and the Wusthof holds its edge far better.

It is my understanding that there is a great deal of variation within even the brands. I know I am looking for forged and full tang, but I'm not very knowledgeable otherwise.

Generally, the higher carbon content in the steel, the stronger the steel. The knife will keep its edge longer. You will be pleased with the Wusthof.

I hope you asked the store clerk to demonstrate this knife's sharpness by cutting through at least 5.5 dead bodies or a .2" square of silk...whichever they happen to have on them at the time
