Default Harrah\'s New Orleans Floor Decision

Harrah's in New Orleans a couple weeks ago, a player verbally goes all-in on the river for $1200 and another player calls him and shows the winning hand. The losing player grabs his $1200 in chips that he committed to the pot and begins to walk out of the poker room. The winning player immediately calls the floor which doesn't attempt to stop or retrieve the committed chips, and then refuses to reimburse.

What would most of you do in this situation? Casino's are so hypocritical when it's not their money at stake. Imagine the same situation at a Blackjack table, and I guarantee you that security would be all over it.
