Your analogy is better than you think. If the freeze dried strawberries have a markup of 200% and the regular wheaties have a more standard 100% markup which do you think they'd rather you buy? It is very possible they would make more money by not offering regular wheaties. At least half the regular wheaties customers would need to switch to make the move profitable.

No clue about the first q, but my feeling about the second is ... 'a lot'.

And even if it isn't, check out the volume #s -- for the borgata, 1.2m on 12 craps tables, vs 2.3m on 59 poker tables. I'm betting the overhead per table is significantly higher on the poker tables, but even if they're even, that's quite a difference.
