For the veto challenge...
How about a good ole dexterity challenge from USG... Pick ten games. Have the players vote for choice 1, 2, and 3 and one game veto. Highest non-vetoed game wins. Everyone plays this one game. They have 1-2 hours to screen print their highest score.
