Signature Dish

I'm making a pilot for the Food Network called Signature Dish. It's going to feature restaurants and chefs all over the country (and Canada) that have a specialty dish that people drive for miles and stand in line for.

We're doing three for the first show:

Rendezvous and their dry rub ribs, in Memphis.

Roscoe's Chicken and Waffles in Los Angeles.

And a more elegant place in Vegas that I haven't chosen yet.

But I need more restaurants for the (hopefully) upcoming shows! So I come to 2+2 for the scoop.

What are some of your favorite places to eat and their signature dish? It can be a five-star restaurant or a back roads diner with a short-order cook - all I ask is that they be known for a particular food item! Appetizer, main course, dessert, even a drink - all good!

So give me: city, restaurant, and dish, and what makes it so good.

The Angus Barn, Raleigh, North Carolina. The dish is steak; they're world famous for it. Also, the head chef was recently on Iron Chef and won; I don't know whether that's good or bad for your purposes. Their wine cellar is also world famous.

I'll put more thought into it later, but two that immediately come to mind are Joe's Stone Crab in South Beach (stone crabs obv) and Katz's in NYC (pastrami sandwich - if this is considered a dish).

You get arguments in St. Louis that Fritz's is better, but people have been standing in line for 50+ years for Ted Drewe's Frozen Custard. It's legendary.

Someplace in Chicago has got to be THE place for a hot dog. I'll leave it to natives to tell us which one, but it HAS to be Chicago. That and Italian beef are definitely Chicago. Then pizza, you could get into wars about that one. So many different types about the true best pizza. Of course you'll need to go to Italy to do some "research". Love the idea for the show. This has got to sell if done right. Unlimited possibilities.

If I see another history of the bananas foster segment on the food network i will probably have to smash my tv.
