Basically I'm looking for cool/adventurous things to do in Europe that aren't museums or galleries or the super busy tourist attractions.

In that case avoiding Rome, Paris and London might be a good idea.

Go to East Europe.

Interlaken in Switzerland is a really cool place if you're into outdoorsy type stuff. Bungy jumping, sky diving, hiking, and canyoning.

Canyoning is pretty awesome. You climb down a rope 200 feet into this narrow canyon with a stream flowing through it and basically jump from water pool to water pool. you have to slide down natural rock waterslides and swing from ropes and all kinds of other fun stuff to get through the canyon.

I did that and it was one of the most fun things I've ever done.

There's lots of info on Interlaken on the net, just google it. Probably a lot of other fun things to do there, but those are the one's that are sticking out right now.

You can stay in some pretty cool hostels there, forgot what they were called, but you'll figure it out.

May is a great time to come to Europe. August is the suck. The islands off the Croatian coast near Zadar are the best kept secret in Europe.
