Default Cool things to do in Europe?

My GF wants to go on a 3 week trip to Europe with me. She is an Art History major and is highly interested in going to Museums and galleries, etc. Personally, I'm not into Art and museums very much.

The basic plan is to do 5 days in each of London, Rome and Paris. We'll obviously do some of the most important things like seeing the Eiffel tower and the vatican...

But, I'd like to hear some suggestions for some other cool things to do in Europe. Perhaps some suggestions that involve more adventurous things to do. Possible examples might include some cool hikes to do or ???

Also, I'd be open to hearing about cool/adventurous things to do in Cities other than London, Rome and Paris.

LOL, she told me that she would say "NO, ask me another time" if I ever tried that.

Also, I would add that we're thinking about going in either May or August.

Basically I'm looking for cool/adventurous things to do in Europe that aren't museums or galleries or the super busy tourist attractions.

Also, how is the poker/casino scene in Europe?

I would go in September. August, the risk of it just being unbearably hot is too high and it will be a lot more crowded.

The only problem with that is that she'll be back in school in September, so that will not be an option.

May is a great time to come to Europe. August is the suck. The islands off the Croatian coast near Zadar are the best kept secret in Europe. But not anymore.
