I'd probably just c/r the flop. If he has an overpair he's probably not folding, and if he has nothing then based on your description of him it sounds like you're probably not getting that much more out of him anyway. I just feel like there are too many turns that will kill your action (a spade, an overcard if he has a pair etc.) that I'd be looking to build a big pot as soon as possible.
