Default coloring off the chips

How does the coloring off the chips work, at the card rooms. Im a B&m noob and I feel dumb asking the question at the table. How does it work out.

In a tournament, they'll come around and take care of it for you. In a cash game, go get an empty rack (or ask a runner for one), fill it up with chips, and ask the dealer to call for a color change. Don't take 'em off the table, though, even if you're just getting up to change them at the cage.
