Even though you didn't get a good look at the plate, I'd definitely call the police and tell them this whole story, exactly as you wrote it, if you can. I'm sure they'll be able to fix everything for you and make sure that the next time you pull into a NJ rest stop at 1AM, you aren't bothered by any weirdos.

I was on the edge of my seat. I've driven from NC to Mass overnight alone before so I know what it's like to be tired in a rest stop. It was a bit anticlimactic. Thought that sharp knife was gonna come into play. p.s. yeah, i think you closely escaped getting man-raped.
