no you probably don't need a new set of calipers if u were just out of fluid. get new pads.. fill resevoir when u are changing, and look at lines for leaks

A friend of mine had one of those cars years ago. I recall that he had a lot of brake problems.

Try to find yourself a competent backyard mechanic and get the parts from NAPA or Auto Zone or whatever. Any brake shop is gonna rake you over the coals.

If you just need rotors and pads it shouldn't cost $500. Rotors for some cars can be pretty expensive but if you let them grind for three weeks I'm guess you don't drive that type of car. Doesn't everyone know someone that will put brakes on their car for a case of beer? I know a few of them. It's not a tough thing to do. Actually I can do it but it's not worth my time.
