what's the proper order for applying oil and seasonings? Does it matter? Is it better to put the seasonings directly on the steak and just put the oil in the pan?

[/ QUOTE ] I don't think it's a big deal which order you do, as long as there's oil covering all of the steak (for good heat transfer), and there's salt on the steak for flavor. I coat the steak with oil, not put oil in the pan. |

That seems way too long, no? Also, it's hard to judge when you're not there, but the picture of his steak definitely looks medium, not medium rare. What happened to guids posting about all his different smoked meats? Plus that steak is a lot closer to medium than medium rare. Blood red center ftw. |

[/ QUOTE ] Coating the steak is probably better. The oil helps to transfer heat to the parts of the steak that aren't directly in contact with the pan. If the parts aren't directly in contact with the pan, then they might not get any oil on them. |
