grilling needs to be year-round...op fails at cooking steak.

charcoal grill wins hands down regardless of weather/season

Just use a lil olive oil and 5-spice seasoning, grill for 5 minutes on each side...

I like my steaks rare, which means I like them as untouched as possible. I really don't see how messing with some meat for over 12 hours is going to result in a better product than two to three minutes on the grill.

Nobody brines a Porterhouse, and anyone taking a NY Strip and curing it is making it into beef jerky. There aren't any new cooking methods under the sun, and there's a reason that the best steak restaurants in the world don't let their meat sit in salt baths for days.
