Compared to everything else GC is Nintendo's crappiest console by far (and I don't mean sales wise, I mean great games wise). That said, you must, must, must pick up Paper Mario 1000 year door if you haven't yet. One of the few GC games that I'll still fire up from time to time.

I'm surprised at how good the Paper Mario series is (Super Mario RPG I'm considering separately) - I always thought they were just mediocre to good RPGs that were kinda fun because they have Mario. I finally started playing the N64 one recently though and it's great. Then I saw a review of the Wii one with the 2D/3D thing and it looks amazing.
