Default Salad Dressing

Hello OOT,

I'm looking for a new vinaigrette for my salads, and I'm curious if any of you have any good homemade recipes. BTW, I'd like it to be sweet, and preferably not creamy.

Something easy that I eat with baby spinach and chopped red onion and canned mandarin orange slices

Mix some olive oil with frozen orange juice concentrate. Thats it. Add some salt and pepper to taste, or whatever else you think would go well. You can use the juice from the canned mandarin orange slices but I don't like it too wattery. Also You can omit the orange slices if you want since there is a lot of sugar in there.

Equal amount of concentrate to olive oil. I'm talking really small amounts tho, like 2-3 tablespoons of each. So just try it out see if you like it, if not u only have a small amount to throw away.

My mom makes a fantastic salad that is similar, it has spinach and raspberry vinagrette (I think), walnuts, strawberries, and crushed bleu cheese

Just try different vinegars. Sherry is a favorite of mine. Apple cider can be good.

Use three or four parts vinegar to oil.

Mix a little mustard with the vinegar, add herbs and/or shallots. Some salt and pepper.

Whisk in olive oil.

Add sugar or honey to taste.

Thats a standard basic vinaigrette starting point.

You should mix about 300ml olive oil with 200 of red wine vinegar.... add juice from one lime and some freshly chopped corriander.... maybe a little wholegrain mustard if you like a bit of spice..... you can't go wrong [img]/images/graemlins/smile.gif[/img]
