Interesting question. I guess one way to calculate would be to check on how many tables are open at 15 minute intervals throughout the tournament. Take that number and multiply it by 1/4 of an average hourly hand rate (let's say 80 hands).

So it would start with about 800 tables (800x20), and keep falling down until there's just 1 table remaining. The tourney runs 9+ hours, so that means 36+ intervals where you need to count the tables.

Now for the "pulling numbers out of my ass" part, I'll guess that overall the average # of tables open during the tournament is 150. So I'll guess that 150 x 20 x 36 = 108,000 hands is maybe possibly somewhere remotely close to how many hands are dealt in the entire tournament.

If you were asking "if someone wins the Sunday million, how many hands will they have played", the answer is somewhere around 800.

(above randomnumberguessing was done with the $215 buyin version of the Sunday million)

This will be a very rough estimation. Let's say they start with 800 tables and every hour the number of tables drops by 50% as the number of players drops roughly by this amount. So the number of tables would go like 800-400-200-... every hour. Now it would take roughly 10 hours to get to 1 table.

Let's assume every hour every table plays 75 hands. That means they will play 800*75 hands in the 1st hour, 400*75 in the 2nd hour and so on. This sums up to roughly 1600*75 = 120k Hands.

Now we got two results within the same region by different methods which means the results are probably correct .
