Default 100NL- AK double 3-bet PF. Call or raise?

Villain is unknown and I think just sat down.

we are only worried about AA really, and anyone who is bad enough to min-raise could well be in here with a hand like AJ

A 2x the pot reraise here isn't a bad play at all, if you're looking to be conservative just call and see the flop. But I prefer to not play overly passive here, make the move that makes your decision on the flop the simplest

nope. pot size becomes awkward for a continuation bet.

Yeah, that would be the best play if you did. But you'll be potting the flop. And if he calls and you're over cards are live than you're still not getting the right odds to hit.

So things could get awkward.
