You're not really "defending" here.

You're calling preflop because you're getting ~7.5-1. J8o is plenty good.

I'd be curious to find out what hands people are calling with in the BB getting 7:1. I think I may be folding too much in this situation.

Do people call with J8o getting 5:1 preflop?

I used to fold too often here as well.

I had this one guy, very succesfull player, rail me for one session, and he was telling me to defend with stuff I'd have auto-muck on without thinking twice. It blew my mind, lol. It was probably the single biggest reason I was in a big downswing/not playing well.

I wouldn't go much further south than my 8 kicker for offsuit jacks. Maybe J7o. Not J6o.

I defend against a steal raise with down to J7o, but I haven't been calling in the BB with J8o after an EP raise and a cold caller (or two).

The fact that there is two coldcallers in the pot indicate there is at least two bad players in the pot. I am not as much worried about being behind to the ep raiser's strong range as I am interested in playing a pot with bad players.

I dont like preflop rules for blind play since its so player dependent and the dynamics is important. But as a standard I want to play hands against bad players. So any hand with straight potential and decent pair potential will be played.

FWIW in this spot I would call J7o, T7o, 75o. I would prolly fold J6o.

If the odds were 5:1 I would prolly muck J7o and think about J8o. J9o would be a call in most spots.

I'd call J8o in the BB here closing the action getting 7.5:1 without thinking twice. I'm probably way too loose in these situations, though. I'd probably call 65o+, 97o+, T7o+ here. Suited maybe 54s+, 75s+, 85s+.

I'm also in the camp of leading the flop and hoping UTG raises overcards.
