Does anybody know what are the equivalent bibles of Mahjong? - i.e. what is the equivalent of the theory of poker and perhaps a good beginners guide?

I am keen to learn the game

Lots of books tell you how to play but there's not a great deal of strategy out there. It also depends on what version you play. http://en.wikipedia.org/wiki/Mahjong has details of the different games, some internet links and some of the books available
