The HDDVD definitely works over component. HDMI is not required.
BluRay is the only one that requires HDCP compatible equipement, IIRC |

Also dvd upconversion only works this way. There is a big post on the xbox forums about the vga and upconversion. |

You can 100% certain get 1080p through component. HD-DVD is another issue.

For the 360 here are the specs
HDMI: HD DVD - 1080p resolution and all others DVD - Upscaled as high as 1080p resolution and all others Games - 720p games upscaled to 1080p, also supports native-1080p games in the future Component: HD DVD - 1080i resolution maximum, limited by AACS DVD - Upscaled to 480p maximum, limited by CSS Games - 720p games upscaled to 1080p, also supports native-1080p games in the future |

I agree with the above, with a small correction. There are already some native 1080p games on the 360. Most notably Blue Dragon and Lost Odyssey will be as well. NBA Street Homecourt is also native 1080p.
But in general, 1080p is not the resolution for this generation. |

Also, high definition movies from the XBox live marketplace can be viewed at 720p and presumably upscaled to 1080p.
