Default Meal/Recipe Idea for tonight

OOT Chefs,

I am having a buddy of mine and his wife over for dinner this evenning and need a little bit of help for a meal idea. Pretty much open to anything but fish, as my GF doesn't touch the stuff.

I am leanning towards a chicken dish, and some sort of rice side, maybe even a stir-fry, but am open to any other recipes.

Instead of scouring the recipe sites on the internet, I figured I would ask here since a lot of you guys love to pimp your culinary expertise.

I was looking for a meal to bring to a thanksgiving potluck. I haven't tried it yet but I'm pretty sure I'm going with this

I would consider roasting a chicken. Perhaps a risotto instead of 'regular rice'.

Here's a tasty and simple one for you. My wife calls this Chicken Ariba

Bake skinless Chicken breasts seasoned with a little taco seasoning.

While this is cooking chop about a cup of fresh spinach (if it safe to use yet) and add to an 8oz bag of shredded mexican blend cheese. About 10 minutes before the chicken is done cover each with this mixture and bake the remaining 10 minutes.

When you take the chicken out of the oven, serve on rice or orzo and cover with your favorite salsa.

I'd also serve magarita's with this.

You can also make Black bean and corn salsa to serve with chips as an appetizer. black bean and corn salsa
