I'm open for playing 10/20. But I thought that the only 10/20 game was the one at the Mirage, and that it didn't run too often. Am I mistaken?

10/20 runs every day at the Mirage. Sometimes it breaks, within a few hours its back.

I would say the only place to be sure on any day of the week and time of day that at least 1 8/16 will be going is Bellagio.
Wynn will likely have 8/16 most evenings and Fri-Sun during the day.

I would also step up to the 10/20 at Mirage which is also usually running.
I found it tough and tight filled with 50+ year old rocks when I played it in October but I have heard it can also be very good at times.
