Jim Carey's "Hello Clarise, its good to see you again" reference to Silence of the Lambs was improv. If you pay close attention, you can see Matthew Broderick cracking up.

In Best Seller James Woods hands Brian Dennehy a watch as a gift. He says, "Patek Philip, the best".

"Star Wars Episode VI: Return of the Jedi" orig. was named "Revenge of the Jedi", but George Lucas later changed the title because he didn't believe 'Revenge' was the way of the Jedi.

this might be pretty well known but Beverly Hills Cop was originally written for Sylvester Stallone... I dunno why he did not do the film, but thank god!!

The actor who played Moe Green in the godfather, is a suspect in a real mob shooting that sparked a fairly big mob war. He was connected with the Winter hill gang (irish).
