For me it was Cindy Mancini.
Edit - after reading OP's meaning of "Jake Ryan" I went the wrong route in my answer. I thought he was getting at the popular one everyone wanted to be with, but if we are going for the perfect prototypical girlfriend type.... It would be Boof or Simone.

Little Seth Green in CBML "Cards with the Tards, what could be better a night of chips, dips, and dorks." classic line right there. And yes, I knew who Jake Ryan was as most 30 somethings do.
