Well, I generally like my bacon a little undercooked so that the meat is just starting to crisp and the fat is still chewy. I also prefer my eggs a little overcooked so that the yolk is just a little bit runny. Yeah, i usually end up with a lot of bacon grease, sometimes i use the spatula to sort of spoon the hot grease over the top of the egg to make it cook faster. it doesn't always come out perfect, but it's super easy.

also bacon grease down the drain is not a good long term solution, try pouring it into a dixie cup, waiting for it to solidify then throwing it out.

Wow. I'm sort of off pancakes/waffles for a while (I used to eat a lot of pancakes), but that looks amazing.

I'm generally a healthy eater otherwise. Oatmeal, salads, fruits, etc.

Not a huge ham fan.. I mean it's OK, but sausage and bacon are so superior I see little reason to mess with it. I'll check out my grocer's meat counter for some high quality sausage though.

Upgrading on the bacon was a huge improvement. I used to just use packaged bacon from the supermarket, sometimes the thick cut. I think they run 2.50-3 bucks/lb. This bacon I use is $4/lb, and it's way worth it. I pick up 8 slices on Friday (about a half pound), so it's always fresh. When I bought the packaged stuff, it'd take me two weekends to use it all, so it was never as good the second weekend.

To a lesser degree, the upgrade in cheese helped too. I like the way the sweetness of the croissant, the salty bacon, and the bitterness of the extra sharp cheddar all compliment each other.

I just finished my sunday "morning" one. Heavenly.

ok, I gotta defend myself a LITTLE here. She was the one who liked waffles. I used to make pancakes and she would always get waffles if we went out for breakfast, so I thought I could get her a joe-bad waffle iron and make her waffles. Then she went on a diet and rarely eats the thing.

On another note, I brought this on the family ski trip and made waffles for everyone for breakfast and it was a HUGE hit. Made a crapload of batter the first day, then we'd just get up, cook up some bacon and sausage and make people waffles as they trickled to our condo to eat. Worked out well.

Cook your bacon in the oven and you will overcome that even-ness problem.

Preheat oven to 400 degrees with a thin baking pan for about 15 minutes. Add bacon. Turn pan 180 degrees after 5 minutes. Bacon should be done in 10 minutes. Can still use the grease for frying stuff.

I think the croissent is a bit odd, id prefer a really nice french baggette. And i cook bacon way way less than that, but i dont like it crispy.

Im curious about the cheese and egg - do you fry the egg then put the cheese on top to melt it over it?
