I received the free $100 promo in the mail & played it up to $850 in the casino. Now i'm wondering if I should stick it all on one bet in the sports book & hedge somewhere else... or just gamble it up because they might not pay out.

Precisely for the reason that they might not pay up, I do not think you should gamble up the $850 in the casino. Don't let them freeroll you. I think you should hedge in the sportsbook, by taking a dog at long odds, and taking the favorite at another book, which will hopefully transfer most (or all) of your $850 to the other sportsbook (if and when the favorite wins).

This is just as risky. Moreso if you think the risk of grimming increases with balance size.

I don't think it's just as risky as if he were to gamble it up in the casino. In fact, think this would preserve a good chunk of his equity. My recommendation assumes (although not stated above) that at a balance of $850, he is already in danger of not being paid (he ran up a $100 promo to $850). If so, I'm not sure what better approach will permit him to extract without giving away much of his equity.

Assume, for example, that currently he has a 50% chance of being paid if he attempts to withdraw right now. Under that assumption, his equity in the $850 is currently $425 (i.e., .5 * 850). By taking an underdog at, say, 9 to 1 (assuming he can get -900 at another book), he has a 9 to 1 chance of retaining the entire $850. Even if oddsmaker will definitely stiff him in the event that the underdog wager wins, his equity in the $850 is then at 90%, or $765 (i.e., .9 * $850). Much better than his current position, and I'm not sure how he can do any better. Gambling it up in the casino certainly won't preserve any of his equity. There are some other small variables that will affect the above outcomes and figures, but not materially (e.g., he may not be able to find a situation where he can get a 0c arb as described above, causing him to eat more equity).

Obviously all of this changes if one disagrees with the assumption that he is already in danger of not being paid.

No, if he hedges at 9-1 dog and it wins then he immediately has lost 7650. Instead of 425 in equity. If the long dog wins, you lose a substantial sum of money. I wouldn't play anywhere that has problems paying winners for this reason.
