Food. is this too sarcastic? Some of my friends just have condiments in their fridges.

- pepper mill (which allows you to keep peppercorns which come in handy for some recipes, plus the pepper tastes better)

Agreed that if you want to start looking remotely cool in the kitchen and at dinner time, you need to use a pepper grinder and have it out on the table at dinner time.

get one very good chef's knife.

Get one big chef's knife. It doesn't have to cost much, just be comfortable in your hand.

[/ QUOTE ]

Between these 2 pieces of advice, lean toward the latter. Most people use knives that are too small - even for "little" jobs, bigger knives usually work better. For example, for chopping garlic, it would seem you want a little 5" knife. Garlic is small, right? But a 10" knife is a lot easier to manage.

Can someone please provide some information on what a good cooking set would consist of? Is it better to buy pieces individually, or in a set?

Do you mean pots + pans? If so, you don't need much. One decent sized skillet (not teflon), one saucepan (1-2 qt) and one large pot for boiling water (pasta) is really all you absolutely need. Obviously, more items will give you more flexibility. If you are only going to spend on one item, get a better skillet (heavy). This is the most important one.

A dutch oven is a nice item, but it can be expensive and is hardly essential. You could sear in the skillet then braise in the big pot. I use my dutch oven maybe a dozen times a year. I use the skillet several times a week.
