Besides playing poker what are the must do or must eat things?

See the fountains at Bellagio of course. That's a given.
Also I guess you can check out the volcano thing at Mirage although I wasn't exactly blown away.
And also Fremont Street experience too I suppose.

Otherwise, depends what you're looking for.
On the romance side of things my GF and I had a nice time at the restaurant at the top of the Stratosphere. It's not exactly the greatest cuisine ever but it's good enough. You go there for the view and to go to the highest point in Las Vegas. The restaurant at the top slowly rotates around so you end up getting a view of the entire city throughout the course of your meal.

We also enjoyed Nobu restaurant at the Hard Rock a ton.

Delmonico's steak gets rave reviews around here but it's not like Craftsteak or Nine steakhouses are lousy.

And obviously there are the various nightclubs to checkout such as Pure or Drais and others.

Go to downtown, get hammered, and shoot craps in one of the joints on Freemont Street. Harkens back to the seedy era in between the Rat Pack at the Sands and the Disneyfied Pirates of the Carribean [censored].

Hit a nice club like Ghost Bar, Rain etc.

Go to the pool or circle bar at Hard Rock on the weekend.

Do not asked the cab driver for strip club recommendations.
