The Quickfire:
I was surprised that none of the judges, particularly Colicchio didn't interview with the onions. There is a difference between "fine dice" - Colicchio's exact wording which he used twice and "mince" in the professional kitchen world. Dice means uniformly sized pieces, fine being around 1/8 to 3/16's of an inch. Mince means just chopped fine with no regard to uniform size. Casey was in fact dicing her onion while Sahara was mincing hers. When Sahara started running her knife back through the pile Colicchio should have stopped her and made her start over. Casey, on the other hand should have seen what Sahara was doing and just gone to town on the onions. |

Good point. You know, I thought that when I saw the chopping too, but then figured I must have just spaced instead of paying attention to the instructions.
FWIW, Sara would undoubtedly have won anyway. The other gal was still very slow. |

I did notice that Casey's knife skills seemed very slow, but if "fine dice" is the reason... |
