Default NL50: Set in 3betted pot - how we can extract most value here?

Playing this hand, the villain (CO) is totally unknown, maybe 10 hands, not more.
And I running: 14/12/3.5

Questions:
1. What we do against unknown villain?
2. What we do against known villain: 14/11/3 ~ 350 hands (These was villain stats 3 hours later)
