Apples are easy. 1-2 weeks depending on some environmental variables. Make sure you peel them. Pear is good too.
Tip for any fruit: Use cheese cloth to strain it. Otherwise you'll end up with tiny bits/chunks if you use a metal strainer or sieve. And the metal can impart an undesirable flavor as well. |

heres a recipe for orange bitters i pulled out of a magazine
preheat oven to 175, scrub 4 seville oranges and remove peel. cut peel into 1/4 inch pieces, place on baking sheet throw in oven turning occasionally, until dry ~2hrs then let cool put orange peels, 2 whole cloves, 2 coriander seeds, 1 allspice, 1 cardamom pod and 1 pint 90 proof vodka into a jar. secure and store in a dark place for 3 weeks, shaking occasionally. strain vodka into another clean jar, reserve peels. add peel and spices to a pan with 1 cup water, bring to boil reduce to simmer for 15 minutes. set aside, covered for 24 hours. then strain into the vodka, strain this mixture 4-5 times. i usually just drink gin or cheap beer, so nfw im taking the time to try this. but its there just in case anyone gets really fanatical about their liquor. |

Some have you cook the cherries a bit, some don't; some pierce the cherries, some don't; most leave the cherries whole, and many pit them. |

I have made cordials with 1 part each of sugar, fruit and vodka. Let steep for several months, strain and consume. Rasberry, cranberries and blueberries make good cordials. They come out like cough syrup.
Also, you can make anisette with star anise, vodka and sugar. |
