2 eggs, over easy.
salt and pepper those tates and dry them off on a paper towel.
then put those on a plate and slide the eggs on over the top.
pop those yolks and let the party begin.

thin layer of oil in a medium sized pan. cut the potato into like 1/2" cubes until golden. shortcut is to microwave the potato whole for a few minutes before cutting it up. make sure the potato is not too big and that you punch some holes into it with a fork before you wave it.
