The thing I notice about those EV graphs is that the disparity at the end of the scale, which seems to indicate that you are running well below expectation, is usually caused by a very short previous stretch of negative variance. If you look at the bulk of the variations in the graph past say hand 20k, you can see that the "channel" between the red line and the median of the blue and green lines is fairly consistent, and that the cause of the huge gap at the end is not a large run of bad cards but the catastrophic stretch of poor showdown performance between hands 15-20k. This stretch can be explained both by poor luck and/or taking overly marginal hands too far.
