If you're ever in Vegas, the Petrossian Paris (the piano bar at the front of the Bellagio) has the best ones I've ever found. Rum Punch ftw:
spiced rum 1/2 pineapple, 1/2 orange a little grenadine some coco lopez if you want it creamy Also Rum Runner, Mojito and Painkiller all rock. Keep your rum in the freezer, it will taste a lot better in mixed drinks, esp. rum & coke. Use white rum from rum and Coke. Malibu and pineapple is awesome. Malibu and gingerale tastes like cream soda. |

I've never heard of anyone using a mortar and pestle to muddle mint for a mojito. You're supposed to muddle it in the lime juice and rum. But yeah, a wooden spoon should work - the thicker the better.
