Zombies Ate My Neighbors
Wii VC would be nice, but on GBA/DS as some sort of compliation would be even better. Eternal Champions on Sega CD was pretty awesome. There are way too many to list.

a GTA based off Chicago
a new Vectorman an updated Max Payne type game a war game based off older wars (revolutionary war, spanish american war, civil war) dont know why, but for some reason i'd like to see it a game based off greek mythology

I'm quite happy that they're remaking Warhawk for the PS3; that goofy launch title was one of the best games ever to release for the original playstation.
Also, Punch Out for the Wii. It's the greatest boxing game of all time, and everyone loves the characters.

Smurfs online would be cool! it could combine all kinds of game styles and game worlds...Swords and Sorcery smurf worlds...Cyber smurf...Super Smurfs...Super Surfing Smurf dudes....

Anyone play Starflight or Starflight 2? Very awesome open ended space exploration/trading games. I would love to see a remake.
BTW, couldn't for the life of remember the name of the game. Didn't remember any of the names of the aliens. Only thing I could remember was the most valuable creature to capture was the 'Brass Harpooner' -- first result on a google search was the Starflight Command website. How did we ever survive in the pre-internet days?

More pseudo-historical action games, not just WWII and Vietnam. Like for example, a first-person action RPG in which you play a German barbarian sometime in the early centuries of the first millenium. It could start as an action game when your character is young and evolve to feature more strategy elements as you character matures and becomes a warchief and ultimately leads his tribe to sack Rome.
Also I'd love to play a similar kind of game as a Neanderthal struggling to protect his tribe from weather, animals, and of course the deadly human scourge. You try to face the humans but they are too strong and cunning so you spend the game fleeing with your tribe, trying to find a safe haven.
