Although I have no recall of these episodes, check out what I found under Joe Pesci's Filmography on IMDB:

"The Lucy Show" .... Lead Musician / ... (2 episodes, 1966)
... aka The Lucille Ball Show (USA: alternative title)
- Lucy and Carol in Palm Springs (1966) TV Episode (uncredited) .... Musician Leader

This one doesn't count because he had a couple lines: "What the hell ah you lookin' at, huh!?" and "Stay on tempo or I'll have to fix yah *&^&in' face for yah."

Doesn't quite count since he has a couple lines, but Samuel L. Jacksons cameo in Out of Sight was awesome. The movie ends on a downer and then his character pops up at the end and suddenly all's well in the jungle.

Hunter S. Thompson in Fear and Loathing. Johnny Depp walks by him in the flashback sequence at the club when Jefferson Airplane is playing.
