I know everybody loves them, but I'd think they'd insulate the cookies, making them brown slower. Wouldn't parchment paper allow for way better browning? (Maybe this was your point in using the silicone.) As usual, your plating is stellar. I personally prefer the one with the blue on top, but both look great.
