I think it depends on the pan. I have nice CalphalonOne pans, and their website says 500 is ok, as long as I'm not broiling. I'd be more hesitant with run-of-the-mill frypans.

Dont use a collander for your pasta, but use tongs instead so you mix pasta + pasta water with the sauce.

The big problem with them is that it's hard to make the temparature change rapidly. If you have 4 stovetops, you can avoid this by preheating a second range to the desired temp and switching the pot.

Use stock instead of water when you can.

Butter makes everything taste better.

Salt extracts liquid from things like vegetables and tofu so its often best to salt and let sit before you cook it if you don't want it to turn out soggy.
